These Sliders are easy to put together, healthy(baked), and flexible to taste. Another great snack option for Gameday. If you missed the other pretty Slider, you can catch yesterday’s Roasted Butternut, Caramelized Onion, Sriracha Mayo Slider post here.

Some days I plan out my day to make something and cook that up, pictured and written up for a post. Some other days, I just go to the kitchen, look around and start working. This was one of those days. I had a few Sweet Potatoes from the weekly farm delivery, so I boiled them. Then started looking for some beans. I did not have any soaking, so looked at my canned bean section, which happens to be on the topmost shelf in the kitchen. This is because the kitchen storage keeps getting full and some days some priorities(beans should be more accessible) are missed in the reorganization. I tried to get the Cannellini beans can from the shelf and it toppled over behind all the other cans. Making a mental note to get hubbs to shift all the bean cans to a lower level, I reached out a grabbed another can. Ha! Adzuki beans.

Then I went to our balcony herb garden and saw some very green and flourishing Dill. Cut some of that, some remnants of Spinach and headed to choose between cucumber, red bell pepper, onions and tomatoes for an added crunch. Dill and cucumber always work so well together. So there they went. I sliced up some of my day oldMultigrain rolls.Went about clicking some pictures. I toasted the ones that would be served. The rolls in the pictures are not toasted. Both work fine. I like warm bread:)

And so is the story of these cute Sliders. The sweet potato patties are quite addictive by themselves. These mini burgers are small but still pack a good punch in filling you up with just a few. I say make some for Gameday!

Steps:

Boil, peel and mash 1 large Sweet Potato or Yam.
Add the rest of the ingredients, mix, mash, mix. Taste and adjust salt if needed.



Make patties and coat in bread crumbs. The mixture will be sticky. Use flour or oil on hands to work. Once baked the patties are quite sturdy.




Bake for 25-30 minutes at 375 degrees F, until golden and dry on the outside.




Assemble and serve.

Sweet potato Adzuki bean burger sliders with Spinach, cucumbers and dill aioli. Fresh, springy and easy. Vegan soy-free Recipe. Makes 7 to 8 patties

Ingredients

  • 1 Sweet Potato or Yam boiled peeled, mashed. about 1 cup mashed
  • 1 cup (230 g) Adzuki beans cooked or canned
  • ½ teaspoon (0.5 teaspoon) salt
  • ½ teaspoon (0.5 teaspoon) berbere spice or other spice blend of choice-Cajun, garam masala etc
  • ½ teaspoon (0.5 teaspoon) chili flakes or to taste
  • 1 Tablespoon onion flakes
  • 1 Tablespoon nutritional yeast
  • 2-4 Tablespoons (2 Tablespoons) flour Wheat or Oat or any gf flour. I used 2 Tbsp wheat
  • 2 or more Tablespoons bread crumbs
  • 1 Tbsp Extra virgin olive oil
  • ¼ cup (25 g) bread crumbs to coat

Assembly

  • Cucumber slices
  • Baby Spinach
  • Fresh Dill chopped
  • Dill Jalapeno aioli add a teaspoon of chopped Dill to the Aioli recipe.
  • Multigrain buns/rolls.

Instructions

  • Boil, peel and mash 1 large Sweet Potato or Yam.

  • Add the rest of the ingredients except ¼ cup bread crumbs. Mix, mash, mix.

  • Taste and adjust salt if needed. Chill for 15 minutes so the mixture gets less sticky.

  • Make patties and coat in bread crumbs. I made 3 inch wide and ½-3/4 inch thick patties. The mixture might be sticky. Use flour or oil on hands to work. Once baked, the patties are quite sturdy.

  • (Use gf bread crumbs or coarsely ground Oats for glutenfree)

  • Bake for 25-30 minutes at 375 degrees F / 190ºc, until golden and dry on the outside.

  • Toast the buns/rolls lightly(optional)

  • Arrange Spinach on the buns, Top with a burger patty, Cucumbers, Dill Aioli, Fresh Dill and the top half of the bun.

    Had some canned organic aduki beans and quinoa leftover. Used them and your recipe subbing in harissa and oatmeal instead of breadcrumbs and put my homemade mango chutney on top over a bed of baby spinach since I do not eat bread. A winner!

    I was looking for an easy vegan burger .. typed that into Google this was a most wonderful surprise… not only delicious, also easy, super easy, quick and the best vegi burger I’ve had, anywhere! Baking makes it so simple. After the 15 mins in the fridge. I slow cooked tomatoes and garlic (whole cut in half) as a “sauce” .. topped with yoghurt on a slice of home made bread salad on the side.     So simple yet so effective 😀 I love the texture and flavour of adzuki beans; they add a richness that’s almost like cheese I think, without the umami. This is the first time I’ve combined them with sweet potato and I’m sure I’ll make these patties again. My mum loved them. I couldn’t make dough today so I made dill & pea pulao on the side instead of bread.

      You can use cannelini or other beans.. i just picked one and went.. anything will work:) not many sliders in the drafts yet maybe i can make it a burger week.. a month is too long:)
